A weekly dinner menu is built for 4 people. Thanksgiving is built for however many people actually show up — 6, 12, 20 — and “just make more” isn’t a plan, it’s a guess that usually ends in three empty side dishes and a half-eaten turkey. Scaling a Thanksgiving menu is a math problem with a fixed answer, not a feel problem.

Why “just make extra” doesn’t work

Doubling a weekly recipe works fine for two extra people. It stops working at Thanksgiving scale, because different dishes scale at different rates — a turkey scales by weight, a pie doesn’t scale at all past a certain guest count (you just make a second pie), and a side dish scales almost exactly linearly per person. Treating them all the same is what leads to five pounds of leftover green beans and a stuffing bowl that’s empty by 2pm.

Instead of guessing, each dish category gets its own fixed per-person amount, then multiplied by your actual guest count:

Per-Person Base Amounts

  • Turkey: 1.5 lbs per person (see the Turkey Size Calculator for leftovers-adjusted amounts)
  • Mashed potatoes: ⅓ cup per person
  • Stuffing: ½ cup per person
  • A vegetable side: ½ cup per person
  • Dinner rolls: 1.5 rolls per person
  • Pie: 1 slice per person, 8 slices per pie
  • Drinks: about 12 oz per person, combined across wine, cider, soda, and coffee — split the mix to match your table
Why per-person, not per-recipe? A recipe is written for a fixed number of servings that has nothing to do with your actual guest count. Per-person amounts scale exactly to any number of guests — 6 or 26 — without needing a different recipe each time.
What about kids? Children under 8 usually eat about half an adult portion — count them as 0.5 guests when scaling the food amounts above. Still count them as full guests for seating and table settings, though; a plate is a plate regardless of portion size.

  • Round pies up, not down — a fractional pie isn't buyable or bakeable, so 20 guests rounds to 3 pies (24 slices), not 2.5

  • Stuffing, vegetables, and mashed potatoes scale exactly linearly — no rounding needed past the cup measurement
  • Drinks assume roughly one 12 oz serving per guest — heavier drinkers or an all-day gathering may need more

Serving Guide: what else scales with guests

Quantities aren’t just food — the table itself scales the same way. For every guest, plan on:

  • 1 dinner plate
  • 1 dessert plate
  • 1 fork, 1 knife, 1 spoon (or the disposable equivalent)
  • 1-2 drink glasses or cups
  • 1-2 napkins

When the guest count changes late

Two more guests showed up? Add the per-person amounts from the table below to whatever you've already planned — don't rebuild the whole menu. That's the entire point of scaling by guest, not by recipe.
